The Food and Drug Administration has suspended the licences of five bakeries across Mumbai, including New Maharashtra Bakery & Stores in Chembur, after inspections found food safety and hygiene violations.
Most people walk into a neighbourhood bakery thinking about what's on the shelf, not what's happening behind the counter. Customers can judge the taste, freshness and price of what they buy. They can't see how ingredients are stored, whether hygiene protocols are followed, or how food is handled before it reaches them.
That's precisely why food safety standards matter. Cleanliness isn't a premium feature that businesses can choose to offer. It's the minimum every customer should be able to expect, whether they're buying a loaf of bread, a birthday cake or an evening snack.
Inspections play an important role in protecting that trust, but they shouldn't be the only reason a business maintains good practices. Food safety cannot become something that's taken seriously only when regulators arrive. It has to be part of the everyday routine, on ordinary mornings just as much as on inspection days.
The real test isn't how a business performs during an inspection. It's how it operates when no one is watching.
